Opera al Nero / Nero D'Avola
The Nero d'Avola is the autochthonous Sicilian grapevine which has most contributed to the rebirth of winemaking on the island. Widespread throughout the region, it finds an excellent habitat in hilly, windy areas of middling altitude; areas which characterise the province of Trapani.
Opera al nero is a nero d’avola which expresses the singularity of the grape variety and the area of origin with elegance and character. Aged in wood, it has an appealing red colour with purple hues.
Good extract consistency, the nose is versatile; the alcohol carries delicious, just ripe, red fruits, blackberry, black cherry, and cherry, wrapped in a graceful note of vanilla, spice and chocolate. It is warm to the palate, the tannins are well rounded, the backbone acidity is good and it has a lively, fresh, fruity finish. Subtle, fine and enjoyable due to its compatibility. It is excellent accompanied with cheese, red meat and game.

Athanor / Perricone
One of the oldest species of red grape vine on the island. The high proportion of Resveratrol in this variety makes it a powerful natural antioxidant with beneficial effects on the human organism. The Perricone, today present in small quantities and almost exclusively in western Sicily, is also known by the name "Pignatello", which apparently derives from "pignatidare", that is the red aluminous soil typical of Trapani, highly suited to the cultivation of this vine. Athanor is the modern expression of the oldest indigenous grape vine species; it is vibrant and with impact, the nose has intense notes of red fruits and heady spices, the palate is all-enveloping with a surprisingly fresh finish. It accompanies and enhances robust dishes, game and mature cheeses.

Opera al bianco / Grillo
The Grillo is an autochthonous white grape which grows almost exclusively in the province of Trapani, particularly in the area nearest to the coast which stretches from the regional capital to Marsala. Historically used as a component for Marsala wine, over the last decade Grillo has risen, with authority and merit, to become the prince of the island’s whites, successfully offering a harmonious complexity of olfactory and taste sensations thanks to modern, knowledgeable winemaking processes which respect the characteristics of this grape. Opera al bianco is an extremely pleasant expression of the grape variety. It is a consistent, crystalline, strong straw-yellow colour. The nose offers olfactory sensations which unfold into floral and fruity notes, yellow fruits, green apple, pear, pineapple and citrus fruit. It is warm to the palate, balanced by good freshness. It has a mineral-fruit finish. It accompanies and enhances fish dishes, rice dishes and white meat.

Albedo / Catarratto
The Catarratto is the most widely grown species of white grape vine in the island territory. It has found an excellent home in the province of Trapani, whose territory, which is characterized by hilly terrains of medium altitude, has proved, over time, to be decisive for the achievement of a wine with a good structure and pleasant complexity. The established techniques of cultivation and the slightly late harvest, in addition to modern and careful wine-making techniques, produces a wine that can satisfy the palate of those looking for persistent flavours. Albedo is the perfect combination of a harmonic bouquet whose floral and citrus aroma portends to the restaurateur pleasant sips of freshness which may accompany and enhance fish dishes and seafood with intense and strong flavours, shellfish, white meats and medium-mature cheeses

Azoth / Inzolia
Also known as Ansonica, Inzolia is one of the oldest species of white grape vine in Sicily. Spread mainly throughout the province of Trapani, it is the basic ingredient of many DOC wines from the island and one of the components of Marsala wine. The delicate floral notes of this grape create a fresh, drinkable wine, also agreeable on its own as a pleasant aperitif. Azoth expresses itself through graceful floral and fruity notes, in the mouth it is soothing and fresh, with a balanced sapidity and a pleasant fruit-mineral finish. Excellent with seafood, white meats and medium-mature cheeses.
