Describing the history of a company and of its home territory, which to be precise, is the Sicilian territory, linked
to wine production, is an extremely complex task. It is undeniable that over time the quality of the sun, the earth and the sea, all connotative elements of the Sicilian territory, have contributed to determine our cultural matrix.
Our "territory", which we perceive as a complexity of significant elements that can reconcile material and tangible aspects such as "the land" with other aspects of an ideal and changing nature such as culture, history, traditions, customs, attitudes and values of individuals has, instead, determined our character and personality.
Thus, 12 chiavi embodies the full expression of the Sicilian territory, but it is also, and especially, never a rhetorical interpretation of the wine culture. Whilst preserving the "knowledgeable art of winemaking", 12 chiavi is able to satisfy the pleasure of drinking in those who have long focused their choices in the contemporary world towards a mindful way of life, based on the continuous search for authenticity, attention and care for oneself and one’s time.

Opera al Nero / Nero D'Avola

The Nero d'Avola is the autochthonous Sicilian grapevine which has most contributed to the rebirth of winemaking on the island. Widespread throughout the region, it finds an excellent habitat in hilly, windy areas of middling altitude; areas which characterise the province of Trapani. Opera al nero is a nero d’avola which expresses the singularity of the grape variety and the area of origin with elegance and character. Aged in wood, it has an appealing red colour with purple hues. Good extract consistency, the nose is versatile; the alcohol carries delicious, just ripe, red fruits, blackberry, black cherry, and cherry, wrapped in a graceful note of vanilla, spice and chocolate. It is warm to the palate, the tannins are well rounded, the backbone acidity is good and it has a lively, fresh, fruity finish. Subtle, fine and enjoyable due to its compatibility. It is excellent accompanied with cheese, red meat and game.

  • Athanor / Perricone

    One of the oldest species of red grape vine on the island. The high proportion of Resveratrol in this variety makes it a powerful natural antioxidant with beneficial effects on the human organism. The Perricone, today present in small quantities and almost exclusively in western Sicily, is also known by the name "Pignatello", which apparently derives from "pignatidare", that is the red aluminous soil typical of Trapani, highly suited to the cultivation of this vine. Athanor is the modern expression of the oldest indigenous grape vine species; it is vibrant and with impact, the nose has intense notes of red fruits and heady spices, the palate is all-enveloping with a surprisingly fresh finish. It accompanies and enhances robust dishes, game and mature cheeses.

  • Opera al bianco / Grillo

    The Grillo is an autochthonous white grape which grows almost exclusively in the province of Trapani, particularly in the area nearest to the coast which stretches from the regional capital to Marsala. Historically used as a component for Marsala wine, over the last decade Grillo has risen, with authority and merit, to become the prince of the island’s whites, successfully offering a harmonious complexity of olfactory and taste sensations thanks to modern, knowledgeable winemaking processes which respect the characteristics of this grape. Opera al bianco is an extremely pleasant expression of the grape variety. It is a consistent, crystalline, strong straw-yellow colour. The nose offers olfactory sensations which unfold into floral and fruity notes, yellow fruits, green apple, pear, pineapple and citrus fruit. It is warm to the palate, balanced by good freshness. It has a mineral-fruit finish. It accompanies and enhances fish dishes, rice dishes and white meat.

  • Albedo / Catarratto

    The Catarratto is the most widely grown species of white grape vine in the island territory. It has found an excellent home in the province of Trapani, whose territory, which is characterized by hilly terrains of medium altitude, has proved, over time, to be decisive for the achievement of a wine with a good structure and pleasant complexity. The established techniques of cultivation and the slightly late harvest, in addition to modern and careful wine-making techniques, produces a wine that can satisfy the palate of those looking for persistent flavours. Albedo is the perfect combination of a harmonic bouquet whose floral and citrus aroma portends to the restaurateur pleasant sips of freshness which may accompany and enhance fish dishes and seafood with intense and strong flavours, shellfish, white meats and medium-mature cheeses

  • Azoth / Inzolia

    Also known as Ansonica, Inzolia is one of the oldest species of white grape vine in Sicily. Spread mainly throughout the province of Trapani, it is the basic ingredient of many DOC wines from the island and one of the components of Marsala wine. The delicate floral notes of this grape create a fresh, drinkable wine, also agreeable on its own as a pleasant aperitif. Azoth expresses itself through graceful floral and fruity notes, in the mouth it is soothing and fresh, with a balanced sapidity and a pleasant fruit-mineral finish. Excellent with seafood, white meats and medium-mature cheeses.

Pandora / ORGANIC EXTRA-VIRGIN OLIVE OIL

From the olive groves located on the hills between the provinces of Trapani and Palermo, cultivated according to traditional Sicilian systems of agriculture, two organic extra-virgin olive oils are obtained: 12 Chiavi Bio delicato and 12 Chiavi Bio intenso. Both oils are obtained from the Nocellara Biancolilla and Cerasuola varieties of olives, mixed in different proportions. Biancolilla, Cerasuola and Nocellara are three typical varieties of olives from western Sicily with different organoleptic characteristics which blend excellently, offering two oils rich in phenols, tocopherols and polyphenols, substances which are important for our body’s wellbeing. The olives of each variety are hand picked, respecting their respective aging times, and pressed within a few hours of harvesting.

Pandora bio intenso is an extra-virgin, fruity olive oil, vivid green in colour, full bodied and dense, in which unaggressive bitter and spicy sensations melt together harmoniously. The taste evokes hints of celery, green tomato, bitter almond and artichoke. Its fragrance has intense notes of green olives and celery. Excellent for dressing bruschetta, roasts, vegetables and legumes.

To the palate it carries hints of mown grass and ripe tomato. It has fruity notes of green pepper and celery. It is excellent on raw fish, steamed fish, salads and pâtés.

THE WINEYARD  


Landscape    

12 chiavi is the brainchild of a group of friends, who love their land and its products, and who decided to create a project to valorize the territory, in which the production and processing procedures of raw materials become the fulcrum of a "modus operandi" favouring the expression of nature in its most authentic dimension and the "production know-how" of elements which embody the quality of life.



12 chiavi is located in the province of Trapani, the westernmost province of Sicily, in a landscape which is characterized by a large predominance of vineyards which give the province the primacy of being the district with the most vineyards in Europe. Here the relationship between man and the land is an ancestral relationship that over time has not only led to the current ampelographic connotation but has also helped to write the local history and culture.
The company, which covers 44 hectares, consists of estates located in different areas of the province, cultivated according to specific criteria that take into account the pedoclimatic aspects of each plot of land: the topography, the climate and the morphology of the terrain elements are the foundations of the company’s production. The towns pertaining to the production areas are Paceco and Alcamo.
The municipal territory of Paceco is characterised by gentle slopes of variable altitude up to 220m in the innermost part, nestling between the territories of Trapani, Erice and Marsala, and the plain of the costal area where the landscape is characterised by the succession of salt pans of the local Oriented Nature Reserve managed by the WWF.
The territory of Alcamo, which has harsher and inaccessible slopes, is on the edge of the provinces of Trapani and Palermo, on the north-western side of the island. Both areas are favourably affected by the nearby presence of the sea and the continuous action of the wind that caresses and cradles the agricultural installations. The territory of Paceco, in particular, has become a natural area for agricultural products of excellence as demonstrated by the production of the Giallo Cartucciaro melon and the Red Garlic of Nubia, Slow Food products, in addition to the important salt production. Alcamo is internationally known as a D.O.C. area, with a backdrop of spectacular natural beauty where, among the remains of ancient cultures, one’s gaze is captured by the geometry of the rows of vines.
